Yay, tomorrow is <a href="http://www.slashfood.com/">Slashfood</a>&#8217;s <a href="http://www.slashfood.com/2005/09/12/here-comes-the-next-theme-day/">Pizza Day</a>, so today I decided to make myself a pizza. Normally, I&#8217;m all about the <a href="http://www.flickr.com/photos/domokate/40333083/">Hawaiian pizza</a>, but after discussing it over with Kyun, we came up with an idea! <strong>Cantonese-style BBQ pork, bean sprout, Shanghai bok choi pizza with mabo tofu sauce</strong>! I know it is a mouthful (a tasty one at that!), but let&#8217;s look at the ingredients.</p>

1. The dough &#8211; The base for the whole endeavor. It&#8217;s a simple dough recipe my mom gave me years ago. Water, salt, oil, yeast, and flour. Let it rise in a dark, warm spot for at least an hour. I put it on top of the preheating oven wrapped in a towel.</p>
<p><a href="http://yamatologic.com/wp-content/uploads/2008/11/mabo-tofu-sauce.jpg"><img src="http://yamatologic.com/wp-content/uploads/2008/11/mabo-tofu-sauce.jpg" alt="" title="mabo-tofu-sauce" width="200" height="150" class="alignnone size-full wp-image-718" /></a><br />
2. The sauce &#8211; I&#8217;m using <a href="http://www.bluetreegallery.com/bluetreehouse_recipe_mabo.html">mabo tofu</a> as the sauce. Basically it is this Chinese savory sauce with meat and tofu that you usually eat with rice. It&#8217;s popular in Japan, so I&#8217;m just using a package mix. <img src='http://yamatologic.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p><a href="http://yamatologic.com/wp-content/uploads/2008/11/chashu-pork.jpg"><img src="http://yamatologic.com/wp-content/uploads/2008/11/chashu-pork.jpg" alt="" title="chashu-pork" width="200" height="150" class="alignnone size-full wp-image-719" /></a><br />
3. Cantonese-style BBQ pork &#8211; Also popular in Japan, so I got it at the market.</p>

4. Beat sprouts &#8211; aka <em>moyashi</em> in Japanese.</p>

5. Shanghai Bok Choi &#8211; A nice dark leafy vege stir-fried in sesame oil. Called <em>chingensai</em> in Japanese.</p>
<p>6. Cheese?! Yeah, I put cheese on them (admittedly, I don&#8217;t know what kind&#8230; Japanese white melty cheese&#8230;). It was yummy, but so against the rules of Asian cuisine. But in Japan, they put cheese on <a href="http://www.ichibanya.co.jp/menu/detail.html?fm=10404&amp;fg=0&amp;fc=4">curry</a> and <a href="http://kr.blog.yahoo.com/huangsy88/1245442.html">okonomiyaki</a>, so hell, may as well! Plus, after tasting, the more cheese I put on, the more it seemed like pizza rather than stir-fry on focaccia.</p>

Anyway, so you know how pizza goes. Flatten out the dough (no, I can&#8217;t spin it, but Gregg can!), put on the sauce, put on the cheese, put on the toppings and throw it in a preheated oven at 233 degrees Celsius. But, there&#8217;s also one important thing! You have to put a stone, or as <a href="http://www.altonbrown.com/">Alton Brown</a> calls it, a thermal capacitor, in the oven! That makes it all crispy and good.</p>

So, after 15-20 minutes, this is the result. Yummy! I gotta say the ingredients go well together. Maybe next time I would leave the tofu out and just use the mabo sauce. But the spicy and sour flavor is just awesome. This was a fun experiment!</p>

I mean, from growing up in LA to living in rural Japan, that &#8216;7&#8242; shows up even in my dreams.</p>
<p>Growing up, <a href="http://thebrainfreeze.com/">brain freeze</a> (which is a registered trademark of 7-Eleven, <a href="http://science.howstuffworks.com/question96.htm">ice cream headache</a> being the more colloquial term) was a coming of age ritual. Having that pain swell up was like going into some sort of <a href="http://en.wikipedia.org/wiki/Religious_ecstasy">religious ecstasy</a>.</p>
<p>Brain freeze is caused by <a href="http://www.myslurpeecup.com/brainfreeze.html">Slurpees</a>. Slurpees are an essential part of 7-Eleven. You couldn&#8217;t have one without the other, right?</p>
<p>Well, that&#8217;s what you think until you move to Japan, walk in to that familiar green-red-orange facade and find out that there are no Slurpees in Japan.</p>
<p>Yes, you heard me. There is an entire nation on the planet where the 7-Elevens do not have Slurpees. It&#8217;s mind boggling. Seeing as there are a lot of familiar things in Japan, I&#8217;d consider that my first real hit of culture shock.</p>
<p>Now for the kicker. A <a href="http://www.itoyokado.co.jp/company/index1_e.htm">Japanese department store</a> company (well, actually, since 7-11 has become so popular, the company is now known as 7 &amp; i Holdings) owns a large portion of 7-Eleven. What? So, Slurpees are owned by a Japanese company, but are not available in Japan. Um&#8230; Sounds fishy to me!</p>
<p>In any case, there&#8217;s <a href="http://www.japan-guide.com/forum/quereadisplay.html?0+9909">unsubstantiated rumors</a> there were Slurpees at one point in the land of the rising sun. And every once in a while, I&#8217;ll meet a Japanese person who claims they have them and that I&#8217;m just not looking hard enough. So, I always hope that maybe the hundreds of stores I&#8217;ve been to in Japan are the exception and someday I&#8217;ll walk in to one and see those swirling windows of blue, orange, and cola staring back at me&#8230;</p>
<p>&#8230;but I&#8217;m not holding my breath.</p>
